Ajwain
Spice used in Indian cooking, also known as Carum or Carom. Seeds are small and light brown in colour with a bitter flavour. Reputedly good for digestion.
Al dente
Italian, meaning just firm to the bite, as in cooked pasta.
Allspice
A dark purple berry native to the West Indies. Usually sold powdered. Used in some Asian and West Indian recipes.
Amchoor or Amchur
Dried powder of unripe mangoes with a sweet and sour taste. Lemon juice is a substitute, though with less complex flavours.
Asafoetida
Resin of a plant that usually comes as a powder if processed. Has a pungent flavour and aroma, so use in small quantities.

Asian Celery

Not to be confused with regular celery, this has much thinner stems, and is used in Thai and Chinese cooking as an aromatic.
Atta Flour
A low gluten flour from India, used for Indian flat breads. Use wholemeal flour as a substitute.
