Thai Tuna Salad

Serves: 2 - 4 persons
Thai Tuna Salad, or Yam (Yum) Tuna Kapong is a simple low-fat salad with a spicy tang. Served with iceberg lettuce, it makes a great snack or light meal. Alternatively, serve with Jasmine rice as part of an Asian meal.

Ingredients
1 small can tuna chunks in broth (oil makes for a heavier salad)
4 stalks lemongrass
6 shallots
¾ cup Thai basil leaves (leaves only, plucked from stem)*
1 – 2 tsp finely sliced Garden Chillies (Prik Khi Nu Suan)
2 tsp Thai Fish Sauce
2 tbsp freshly squeezed lime juice
Pinch of sugar – optional
To serve - Iceberg lettuce leaves (if as a snack)
* - Use Italian basil if Thai basil is not available. Reduce quantity by about ¼.
Preparation
1) Peel shallots and slice thinly.
2) Rinse basil and pluck leaves from stems.
3) Rinse garden chillies and slice very finely.
4) Trim lemongrass leaving the bottom 8 cm / 3 in. Peel off and discard 1 or 2 outer layers, leaving the tender interior portion, or core.
5) Slice lemongrass into very thin rounds, perhaps 1mm thickness.
6) Drain most of the liquid from the tuna, then place the chunks in a bowl and lightly break up.
7) Add sliced lemongrass, shallots, chillies, fish sauce, lime juice and sugar (if using). Toss lightly.
8) Take ½ the basil, tear leaves in half, and then add these plus remaining basil to the tuna mix. Fold in gently.
9) Allow to sit for 10 minutes, then taste and add lime juice, fish sauce or sliced chillies to taste.
10) Serve either with Thai Jasmine rice, or as a snack with iceberg lettuce leaves – take a palm sized portion of leaf, put a spoonful of tuna salad in the center, fold and eat.
